Raw Vegan Beet Medley Salad

Continuing on experimenting with beets! Yesterday I made this delicious medley salad for lunch, and then repeated same for dinner and continued the next day. Despite of looking like some complicated mix, this salad is actually super simple and only has 5 ingredients! It also tastes so good and is so filling that I’m sure you’ll love it and might actually even include it among your festive recipes.

Raw Vegan Beet Medley Salad


  • 1/2 medium beet
  • 1 medium carrot
  • 1 tbsp frozen green peas
  • 5 cherry tomatoes
  • 1 tsp shaved red onion
  • 1 pickle
  • 1/4 avocado (optional)
  • 1 tsp almond dressing (can be replaced with olive oil)


Wash and peel beet and carrot. Defrost green peas in warm water, slice cherry tomatoes in half, slice the pickle. Mix all ingredients well, place in a bowl and dress with either almond dressing or simply with olive oil.
