My addiction to red cabbage continues. Moving to PNW, finding a place here, first rainy months and all that stress had taken its toll on my raw vegan habits, and now I’m bit by bit trying to get back on track and do at least 80% raw for now. Red cabbage is a great help in these plans. It’s very high in vitamin C and because it’s Spring right now and we are all in need of vitamins, that might be the reason of my fascination with it. In any case I crave it and make new salads with it every day. This time it’s a combination of red cabbage, various veggies and sunflower seeds.

Mix all ingredients in a bowl. Prepare dressing by whisking lemon juice, olive oil, salt and pepper and pour over your salad.
