Raw Key Lime Pie

Well, despite of not having any access to real Florida key limes, I decided to give it a try with grocery limes. Inspired by Crudessence raw restaurant in Montréal, I’ve been wanting to try my own version for some time already, so nothing could stop me now. Ah well, it worked out pretty nicely!

Raw Key Lime Pie

So the given ingredients make enough pie for 6 large pieces, so could easily fill 3 people.

  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup walnuts
  • 1/4 cup brazilian nuts
  • 1/4 cup almonds – all nuts could be soaked for couple hours, I just used them dry
  • 2 large medjool dates (if using other types of dates just double the amounts)
  • 1/4 tsp salt
  • (optional) a tiny bit of water just to have everything stick together to get a dough

  • juice from 1 or 1.5 limes
  • 5 large medjool dates
  • 1 ripe avocado
  • 3 tbsp coconut oil
  • 1/4 tsp salt

You’ll need a food processor with S blade. To prepare the crust, mix all ingredients together and the mix is too crumbly, add a bit of water and mix again to have a dough. Then in a pie form press the dough to create a base layer. Then in the same food processor mix all ingredients for the cream layer. Try the mix and adjust sweetness by adding more dates. When it’s ready, pour it on top of the crust and spread evenly. Cover the pie form and freeze it for couple hours. You can decorate the pie with several lime slices. Enjoy!
