I love chickpeas, but I don’t like stir-frying them everyday. So sometimes I go with this simpler version – make a cumin chickpea tomato salad.
Cumin Chickpea Tomato Salad recipe
- 1 tsp ground cumin
- ½ tsp cumin seeds
- ½ average tomato, chopped
- 2 cups boiled chickpeas*
- 2 tbsp cilantro chopped
- Black pepper to taste
- Salt to taste
- Some grapeseed oil to (1 tsp or more)
- 1 tsp yellow onion, chopped finely
*this salad can also be made with sprouted chickpeas
Mix all ingredients, and sprinkle some grapeseed oil. Add salt and black pepper to taste. That’s it! Very light and healthy, but quite filling.
This amount serves one person.
