Detox Program Day 1 – Apple Beet Juice

For the day 1 of my Detox Program, I’m having a super delicious blend of veggies, greens and apples. Just look at this gorgeous color! And trust me, it tastes even better than it looks! ūüôā

You don’t have to follow the guidelines, however they are based on my personal experience from my many previous juice fasts, and I created such guidelines for reaching the most optimal results. Detox Program Day 1 - Apple Beet Juice

Ingredients:

  • 5 medium carrots
  • 1 small beetroot
  • 1 medium apple (I used gala)
  • 1 orange
  • 1/2 lemon
  • 1 large leaf curly kale

Instructions:

Wash and peel carrots, beet, orange and lemon. Soak and wash kale. Cut all ingredients into smaller pieces and run through a masticating juicer such as Omega. If you’re using a centrifuge juicer instead (such as Hamilton Beach), then take 3 times more kale, as centrifuge juicers don’t extract greens juice as efficiently as the masticating ones. Pour your delicious juice into a beautiful glass and enjoy!

Hey everyone!¬†So here’s the reminder that the Juice Fast will start on Friday, and if you would like to do 2 day water fast before it – today is the time to start your fast.

Benefits of doing a water fast before the Juice Fast:

  • Tuning your body into the fasting mode by preparing it for less amounts of food intake
  • Releasing more unwanted weight (good weight will stay with you – Juice Fasts never bring you malnourishment)
  • Letting your digestive system relax
  • Better detoxification

You do not have to do the water fast, but I highly recommend it, especially if you are already familiar with fasting and you know your body’s reaction to it. Start with just 1 day water fast if you’re new to fasting. Do 2 days if you’re already familiar with fasting.

Also, if during the water fast you notice that you’re becoming nauseous and dizzy, then instead of giving up on your fast, try spending these 1-2 introductory days on herbal tea. The herbs that you could use use are¬†chamomile, peppermint, heather, raspberry leaf.

Hey Friends!

Hope the¬†beginning of your¬†New Year 2016 has been great and very busy, succeeding at things you do and making¬†your dreams into reality. My January has been extremely busy with work and study, hence so little posting lately. But I’m planning to change this by making a new habit of posting more regularly to this blog, and I’m inviting you to witness my progress on this ūüôā It’s always better to build new habits with the support of like-minded people around you, isn’t it?

For the same reason, I’ll be organizing a 7 Day Juice Fast this coming week starting on Wednesday! And I’m again inviting you to join me in this detox program, which we probably all need after a little bit of over-indulging during the holidays. Interested? Then read on!

I’ve done a number of juice fasts over the past few years and the results were always fantastic, including:

  • feeling light and energetic
  • releasing¬†couple stubborn¬†pounds
  • staying lean long after the fast (the released pounds¬†do¬†not come back)
  • enjoying the elevated mood
  • feeling vibrant and healthy!

And these are just a few positive results to mention. That is why I really urge you to join me in this *completely free* program. Whether you feel you do need to lose couple pounds, or you’re in excellent physical shape but have been feeling tired lately – everyone will benefit from it!

Detox Program - 7 Day Juice Fast! Join Me on February 3rd!

I will follow the same juice fast recommendations, as during my previous fasts, because they proved to be efficient:

  • Enter the juice fast by actually fasting for¬†2 days on water or herbal tea (no food should be taken for best results during the whole ‘fast’)
    • It is better¬†to only drink water during the first 2 days, however if you feel nauseous or have headaches I suggest you have some herbal tea such as raspberry leaf tea, peppermint, heather flower tea, chamomile.
    • If you experience a strong headache during the first day of water/tea fast, take a laxative
  • Start the juice fast itself from day 3 on
  • Continue juice fast for 7 days
  • Drink unlimited amounts of water if you feel a need
  • Apart from water, you should only drink freshly squeezed juices
  • Any fruits or vegetables can be juiced, the less pulp the better
  • Drink as much juice as you wish during the day – it¬†is the best way to keep yourself from exiting the fast
  • Starting from the first day of fast (day 3), you¬†should do at¬†least 30 min of exercise per day – jogging/ dancing/ walking etc (if you’re feeling dizzy, be careful and take one¬†day break or until you feel better)
  • If you’re feeling fine but just tired – don’t let your body trick you into staying put, but drag yourself out of the house for a bit of a walk – you’ll notice that this will magically make you all of a sudden more energetic!

These¬†are the simple ‘rules’ for this juice fast. Of course, the rules are not rigid, they’re just a simple guideline for you guys to refer to for getting the most optimal results. You might start getting weak and unenthusiastic¬†from day 2 up to maybe day 4 or 5, that is why I’m planning the most potentially “tired” days for the weekend. However, if you follow the guidelines and try to force yourself to move-move-move during this fast, you will notice that from day 4 or 5 on your body will become more and more energetic, feeling more and more light and craving more and more exercise!

Happy New Year 2016 to all of you! Wishing you merry holidays, happiness, health and plenty of raw veggies and fruits on your festive table! ūüėĬ†Even if you’re not a fully raw vegan, you can always just include a couple raw dishes for the seasonal celebrations, as well as fresh berries, fruits and smoothies. They are so bright and colorful and will make any festive table beautiful, along with¬†keeping you healthy and lean throughout the holidays season. Our celebration this year included raw berries, raw cheese stuffed peppers and a super delicious¬†festive beet salad. The¬†salad has a variety of flavors and textures which is so diverse and yummy that you’re guaranteed to stay away from any non-vegan/cooked foods during your holiday dinner! You’ll be amazed at how delicious raw beet tastes in this blend. Give this salad a try, it might well become one of your festive recipes¬†staples.

Raw Beet Festive Salad Recipe

Ingredients:

  • 1 large green¬†kale leaf
  • 1 large¬†carrot (or 2 medium carrots)
  • 1 medium beet
  • 8 cherry tomatoes
  • 1/2 avocado
  • 3 pickled cucumbers
  • 2 tbsp raw sunflower seeds
  • 1 cup frozen green peas
  • 1 tsp minced fresh¬†ginger
  • 1 tbsp red onion
  • 2 tbsp cold pressed oil – I used avocado oil
  • juice of 1 Meyer lemon
  • salt to taste

Instructions:

Wash kale, remove and dispose the stem, chop kale and add to a large bowl. Peel carrot and beet, then shred them on a large shredder. Slice tomatoes, mash avocado, slice pickled cucumbers. Thinly slice red onion. Defrost green peas in warm water, changing water couple times. Add all ingredients to the bowl with kale and dress with oil, lemon juice and salt. Mix well and serve!

Raw Almond Cheese Stuffed Peppers

Happy holidays friends! ūüôā This Christmas and New Year’s eve I’m making this amazing raw vegan snack – almond cheese stuffed peppers. The recipe includes two steps – making almond cheese and then stuffing the peppers. Although the preparation for both of these steps is really quick, the soaking of almonds and then cheese fermentation take about a day each, so make sure to plan accordingly.

Raw Almond Cheese recipe

Ingredients:

  • 2 cups raw almonds (if not soaking, take 3 cups)
  • juice of 1 Meyer lemon
  • 1/2 – 1 tsp sea salt
  • 1/2 – 1 cup filtered water

Instructions:

Soak the almonds overnight (this step should ideally be included, but if you’re short on time and have a high-speed blender like Vitamix you can omit it). The next day rinse the almonds well and drain the water. At this point you can peel the almonds, which is very easy to do when they’re soaked. Or you can leave the peel on which doesn’t affect the taste much. Add almonds to your food processor (I usually use Hamilton Beach)¬†along with lemon juice and salt. Start blending, adding water bit by bit – the less water you use, the better will be the result. After the mixture is very well blended into a thick paste, wrap¬†it into a cheesecloth (folded 4 times) and give it a squeeze to remove most of the liquid. You can drink the liquid – it actually resembles ayran and tastes pretty good. As for the cheesecloth wrapped¬†almond mass, place it¬†into a large strainer over a deep dish and leave for 24 hours to ferment. In a day, you’ll get your raw almond cheese. If you follow all of these instructions you will get a soft crumbly cheese similar to ricotta.

 

Raw Almond Cheese Stuffed Peppers recipe

Ingredients:

  • 5 sweet mini peppers
  • 1 tbsp almond cheese
  • 1 medium garlic clove
  • 1 tsp olive oil

Instructions:

Mince garlic and add it to 1 tbsp of almond cheese, along with olive oil. Mash the cheesy mixture with a fork. Remove top of each pepper and then stuff it with the cheesy garlic mixture using a teaspoon. Place the stuffed peppers into a fridge for at least 30 min. Then slice the stuffed peppers and serve.

Raw Vegan Beet Medley Salad

Continuing on experimenting with beets! Yesterday¬†I made this delicious medley salad for lunch, and then repeated same for dinner and continued the next day. Despite of looking like some complicated mix, this salad is actually super simple and only has 5 ingredients! It also tastes¬†so good and is so filling that I’m sure you’ll love it and might actually even include it¬†among¬†your festive recipes.

Raw Vegan Beet Medley Salad

Ingredients:

  • 1/2 medium beet
  • 1 medium carrot
  • 1 tbsp frozen green peas
  • 5¬†cherry tomatoes
  • 1 tsp shaved red onion
  • 1 pickle
  • 1/4 avocado (optional)
  • 1 tsp almond dressing (can be replaced with olive oil)

Instructions:

Wash and peel beet and carrot. Defrost green peas in warm water, slice cherry tomatoes in half, slice the pickle. Mix all ingredients well, place in a bowl and dress with either almond dressing or simply with olive oil.

Power Beet Juice

My usual juice these days is beetroot based! Just like my salads, which you know if you read my blog ūüėČ The reason is simple – beet prevents and heals anemia and fatigue, and with the short days and gloomy weather outside power of the beetroot juice is exactly what we all need! Ingredients:

  • 4 large carrots
  • 1 medium beet
  • 1 orange
  • 1/2 lemon

Instructions:

Wash and peel wash all ingredients. Cut beets and carrots into smaller pieces. Juice using a masticating juicer like Omega for best results. Alternatively, you can use a centrifuge juicer such as Hamilton Beach.

Zucchini Noodles and Kale Salad

Greens are exceptionally important in raw vegan diet. And kale is definitely one of¬†the healthiest and delicious¬†greens to use. Kale’s health benefits are endless, but just to mention a few:

  • Kale is very high in iron – in fact, kale has more per calorie iron than beef. Iron is an extremely important element in blood building process and carrying oxygen, therefore being essential for our health;
  • This green is super high in powerful anti-oxidants and vitamin K that are known to protect against various types of cancers;
  • Being also high in Omega-3 fatty acids, kale works as a great anti-inflammatory source that helps fighting arthritis, asthma and auto-immune disorders;
  • High levels of vitamins A and C in this leafy green help protect eye health, improve skin and maintain metabolism;
  • With all that said, kale is also very low in calories, so while filling up with all the healthy vitamins and nutrients you won’t be gaining unwanted weight.

All this is making kale a truly miraculous food, that is why we should include it regularly in our meals.

Ingredients (serves 2)

  • 2 medium zucchinis
  • 3 large kale leafs
  • 4 tbsp marinara sauce

Instructions:

Wash zucchini and kale. Slice or tear kale into smaller pieces. Spiralize zucchini using Tri-blade Vegetable Spiralizer. Dress with this super delicious and simple marinara sauce.

 

 

Rainbow Salad

As¬†farmers markets close for the season and availability of fresh local fruits and veggies diminishes, I always am starting to crawl back onto greens and roots based salads. In fact, the main ingredient in these salads that keeps me staying raw vegan are specifically root vegetables. These kind of veggies – carrots and beets in my case – are extremely satisfying and what’s most important about them is that they feed our good gut bacteria and promote its further growth, which in turn provides us with vitamins, protects us from pathogens and keeps us active and healthy. That is why if you’re feeling hungry, depressed and unsatisfied during the Fall months, after the abundance of Summer is over, make sure to eat plenty of root vegetables. Carrots, beets, turnip are all very delicious by themselves, in salads, in juices and are also very inexpensive and largely available throughout the year. This time I¬†made a rainbow salad with greens, roots and berries.

Ingredients:

  • 1 cup baby spinach
  • 1/2 medium beetroot
  • 1 medium carrot
  • handful blueberries
  • handful cherry tomatoes
  • 1 inch English cucumber
  • 2 tbsp frozen¬†organic corn
  • 1/4 Meyer lemon

Instructions:

Wash and peel beet and carrot, then shred them. Slice cucumbers and tomatoes, defrost corn in warm water. Place baby spinach leaves on the bottom of a bowl and then arrange rest of the veggies on top. Dress with freshly squeezed Meyer lemon juice.

Vibrant Antioxidant Smoothie

Smoothie galore continues! This time I used frozen local peaches with fresh blackberries – amazing combo you’ll fall in love with. This smoothie is so fresh and invigorating while being super delicious at the same time. Works great as a satisfying breakfast after a morning jog. Did you know about these important health benefits of blackberries and peaches:

  • Blackberries are high in bioflavanoids and Vitamin C
  • The dark blue color of blackberries indicates that this berry contains one of the highest levels of anti-oxidants of all fruits!
  • Peaches are high in Vitamins C and A which together work as a great natural moisturizer – perfect for drying cold winter outside
  • Peaches also work to reduce hair loss and fight anxiety (peaches are often referred to as “fruit of calmness” in Hungary)

Vibrant Antioxidant Smoothie recipe

Ingredients:

  • 1 kale leaf
  • 1 cup frozen peach
  • 1/2 cup blackberries
  • 1/2 apple
  • 1 orange
  • 3 tbsp water or more

Instructions:

Wash all ingredients. Peel the orange, remove core from apple. Cube larger ingredients and add everything into a high speed blender like Vitamix. Mix on high speed until all ingredients are well blended. Pour into tall glasses and enjoy every sip!
